Impossible Meatballs
Ingredients
- 1 pound Impossible meat
- 1/2 cup onion, diced
- 1 clove garlic, chopped
- 4 tablespoons gluten-free bread crumbs
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme
- 1/2 teaspoon sage, chopped
- 1/2 teaspoon rosemary, chopped
- 1 tablespoon salt
- 1/4 teaspoon black pepper
Preparation
- Preheat the oven to 400 degrees F. In a large mixing bowl, combine all the ingredients. Scale the mixture into two-inch meatballs and place on a baking sheet. Roast until browned, 25 to 30 minutes.
Spicy Tomato Salsa and Chips
Ingredients
- 8 Roma tomatoes
- 1/4 yellow onion, roughly chopped
- 2 cloves garlic
- 1 jalapeno, stemmed
- 2 tablespoons chipotle
- 2 tablespoons kosher salt
- 1/2 bunch cilantro, chopped
Preparation
- In a cast-iron skillet, sear the tomatoes, onion and jalapeño until lightly blackened. Place the vegetables and the rest of the ingredients, except for the cilantro, into a blender. Puree and taste for seasoning. Place the salsa into a bowl and stir in the cilantro. Serve with chips, burritos, fajitas and other dishes.
Achiote Meat Marinade
Ingredients
- 1/2 pound achiote paste
- 32 ounces orange juice
- 1/4 cup garlic, minced
- 1/2 cup lime juice
- 1/2 tablespoon salt
Preparation
- Puree all the ingredients in a blender. Use the marinade with chicken, seafood, pork or beef. The flavor is best if you marinate the meat for 24 hours or longer before cooking. The marinade can also be frozen for later use.
